The main difference between apricots and peaches, which are both stone fruits, is that peaches tend to be a bit sweeter but overall they make for the closest and best alternative. All you need to do is chop the dried apricots, soak them in hot water until it’s softened, and then throw them in the food processor until you get a smooth, thick consistency.
